Strips of goose breast between the sizes of a pencil and a magic marker (scientific mearsurements)
Soak in a mixture of 1/2 beer & 1/2 yellow mustard (the hot dog kind - sorry Frans & Jonis) for 20 min.
Roll in a mixture of yellow cornmeal, a dash of salt, & cayenne to taste (taste the cornmeal mixture alone - it should be VERY spicy since the cooking will cut the spice in half)
Fry like fish in an inch of hot oil (peanut burns least easily) just until crisp, should be pink on inside.
This is quick, makes a nice party snack & even things tough as jerky are chewable if pencil sized.
