Goose in Orange Sause

1 Specklebelly Goose Picked W/skin on.
Season inside and out with Poultry Seasoning.

Stuff with Apple Rice Dressing (see below)

Roast to medium rare (about 149 degrees on a meat thermometer) or about 1 - 1.5 hours.  Make a glaze of Orange Juice and Apple Jelly and baste with this during roasting (about every 15 minutes)

To make the glaze heat orange juice in a saucepan and add the apple until it dissolves.

To make the dressing:

Sauté onions and celery in butter until tender.  Add cubed apples and pecans and sauté for a few minutes.  Then add a long grain and wild rice mix and cook until the rice is tender.

Sorry there isn't any exact measures but it's the way I cook.  It drives my wife nuts.
