On Saturday evening, I was rousting through the cupboards looking for the makings of dinner and I came across a jar of pasta sauce my wife had bought on sale(some sort of white sauce with parmesan & mushrooms). It clicked that I'd just seen a bag of birds in the freezer, so I started concoting. Heated up the sauce, cooked some pasta and thawed the birds (pheasant & couple grouse). I tossed the birds in the fry pan and grabbed a bottle of sherry from the bottles of rum, wine, etc, on the microwave (all of which are primarily used for cooking).
I put 1/2" of sherry in the bottom of the fry pan, tossed in a dash or two of Worchester Sauce and simmered till done. When cooked, I cut up the birds in bite sized pieces, put some on top of the pasta and topped with the sauce. Turned out pretty darn good, heck of a lot better than frozen beef and bean burrito alternative. ;-)
> The recipe sounds fine. One question :
> did you brown those birds first, or just
> put the sherry in with them raw?
I turned on the pan, tossed in the birds, turned around, grabbed the closest bottle, and dumped it in. I like to cook on the fly, so to speak. ;-)
