Number of smallish pineapples - one per person.
Brown sugar.
Brandy.
Butter.
Cinnamon if preferred (I don't add this as my wife don't eat it)
Enough tin foil to individually wrap each pineapple.
- Cut the top off the pineapple.
- Hollow out the pineapple small pieces at
a time. Take care to leave the sides thick enough that the natural
holes don't open up else the sauce will leak out.
- Put back the pineapple pieces, packing it
in layers. Between layers add butter, brown sugar and cinnamon to
taste, and sprinkle with brandy.
- Put lid back and wrap in tin foil.
- Place (upright!) on slow coals for about
20 minutes.
- Take off and enjoy - each his own.
The thick sides you had to leave in order for it not to leak is scraped to the skin, let me tell you.
