Rock Chucks

I ate boocoo rock chucks (Marmota flaviventris) and will do so again, I expect.  I oven-BBQ them.  Put them into a baking dish with a dash of lemon juice, cover with aluminum foil, and pop them into the oven for <1/2 hour.  Pull em out, peel off the tinfoil cover to the dish and add some BBQ sauce over the meat.  Cover them back up and give them another 15-20 minutes.  Repeat, but turn the pieces.  Then about 10 minutes prior to serving, remove the tinfoil to let the BBQ sauce 'crust up.'  MMM-good.
