Snakes


Section into 4-5" pcs, dip them in meal (or batter, yankee) and deep-fry them like catfish;  serve with cocktail sauce, tartar sauce, but watch them rib bones.


Boil or steam, flake the meat off and prepare like croquettes, patties or cakes.


This is the __________ cake recipe i use:

2 lb flaked cooked fish, snake, crab or chopped crawfish or shrimp or mix
1/2 tsp liquid crab boil or 1 tsp old bay seasoning or some of each
1 tsp lousiana red
1/2 tsp salt
1 tsp fine pepper
dash of tyme, sage, cumin, oregano
3 dash cayene
1 egg
1+ tbsp grated onion
1+ tbsp grated bell pepper
1+ tsp crushed (or minced) garlic
1/2 grated jalepeno or serrano

mix in a large bowl, adding just enough seasoned breadcrumbs or cornmeal to make mix stiff.  form into patties and deep fry or into balls and bake or steam.  if steaming, add old bay a/o shrimp & crab boil to water.
