Stuffed venison

        Take two backstraps, cut length to fit greased rectangular baking pan.  Butterfly backstraps the long way and pound flat.  Mound favorite stuffing on one and lay the second on top, then secure edges with skewers.  Cover with strips of bacon and bake in 325F oven for 1-1/2 hours or until bacon is done.  Remove from oven and
let sit for 30 minutes.  Remove skewers and cut venison into slices of desired thickness.  Feeds up to 20 if sliced thin.
